The ingredients of this pizza consist of cauliflower, salmon, crème fraiche, spinach, parmesan and mozzarella. Cauliflower is an excellent source of tryptophan, salmon is is filled with vitamin B6, dairy products are high in calcium and spinach is a good source of iron. These nutrients are necessary for the production of sleep hormones, melatonin and serotonin. They are said to regulate your mood and sleeping patterns. Pizza Crust

  • ½ a head of cauliflower
  • 2 tablespoons of parmesan
  • 1 cup shredded part-skim mozzarella cheese
  • 1 egg
  • Salt and pepper

Toppings (Optional)

  • 1 salmon fillet
  • 1 clove garlic
  • Handful of spinach
  • 2 tablespoons of parmesan
  • 2 tablespoons low fat creme fraiche


1-Preheat the oven to 220°C (425°F)

2-Cut the cauliflower in half. Grate the cauliflower or toss it in a food processor.

3-Place the cauliflower in a large bowl and heat it in a microwave for 8 minutes or until soft.

4-Remove the cauliflower from the microwave and set to cool.

5-While you are waiting for the cauliflower to cool down, cut the salmon into small pieces and fry with garlic.

6-Mix in the egg, parmesan, and mozzarella with the cauliflower. Mix until well combined.

7-Cover a 10-inch pizza pan with baking sheet paper and lightly cover with non-stick spray.

8-Pat the cauliflower paste in the pan and bake for 10 to 15 minutes, or until golden.

9-Top the pizza with creme fraiche, salmon, spinach and parmesan.
